Although traditionally Lebanese in origin, Fattoush Salad is very common throughout the Middle East. It’s a family style salad you can really dig into. Chock full of delicious ingredients and textures and topped with crunchy balsamic pita chips. We serve this at pretty much any occasion where we have a large crowd to feed and it’s a healthy, delicious addition to our Italian Succot feast. Click here for our other Lebanese recipes.
Serves 8-10
Ingredients
For the Salad:- 4 bundles romaine lettuce, washed, dried & chopped
- 2 English cucumbers, peeled and chopped
- 4 large tomatoes, chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup dill pickles, chopped
- 1/4 cup sweet gherkin pickles, chopped
- 1/2 cup pepperoncini, chopped
- 1/2 cup pomegranate seeds
- 2 cups feta cheese, crumbled
- 1/2 cup kalamata olives, pitted
- 1/4 cup pine nuts, lightly toasted
- 1/4 cup fresh mint, chopped
- 1 cup olive oil
- 1/4 cup balsamic vinegar
- juice of 1 lemon
- 1/2 cup kalamata olives, pitted
- 2 garlic cloves
- 1 tbsp cumin
- 1/2 tsp salt
- pepper to taste
- 2 cups pita chips, crushed
- 1/2 cup balsamic glaze
Instructions
- Toss all salad ingredients in a large bowl and set aside.
- Place all dressing ingredients in a food processor or blender and puree.
- Combine crushed pita chips with balsamic glaze and set aside for 15-20 minutes.
- Right before serving, drizzle dressing over the salad and toss.
- Top with balsamic pita chips.

I use sunflower seeds or pumpkin seeds instead of pine nuts due to an allergy and dill not sweet pickles. It’s yummy.
