Watermelon “Tuna” Sashimi

Tuna from Watermelon? Is it a magic trick?

This is an easy, delicious, and surprising recipe to serve your family and friends who are vegan, or just enjoy culinary surprises. I served to to my family and it took them several bites before they realized it was actually fruit and not fish.

Try it as a fun dinner surprise!

Watermelon “Tuna” Sashimi

  • 1 large Seedless Red Watermelon

Marinade:

  • Kikkoman soy sauce – ½ cup
  • Miso paste – 3 tablespoons
  • Water – 1/3 cup
  • Rice vinegar ¼ cup
  • Lemon juice – 1 lemon
  • Chili garlic sauce – 1 tablespoon
  • Ginger  – 3 tablespoons freshly grated
  • Sesame oil  – 4 tablespoons
  • Ume Plum Vinegar – 3 tablespoons

Adjust the amounts depending on the size of the watermelon

Adjust the ratios for personal taste preferences

Process

  1. Whisk the ingredients for the marinade together.

2. Cut the watermelon into a block.

3. Poor the marinade over the watermelon. Allow the watermelon to marinate in the fridge for 24 hours, flipping halfway through in order to have the entire watermelon be soaked in the marinade.

4. Roast the watermelon in a cake dish at 350 degrees for 3 hours.

5. Slice into serving pieces and then broil for 15 minutes just before serving.

Plating Suggestions

  • Garnish “Tuna: with black and white Sesame Seeds.
  • Serve the “Tuna” with Pickled Ginger and Wasabi
  • Optional: Pair with Sake.
