We can’t get enough of classic guacamole but sometimes we like to give it a little twist by adding sun-dried tomatoes. They add a burst of color, texture and a layer of intense tomato flavor.
Serves 6-8
Ingredients
- 4 avocados, pit removed and roughly chopped
- 1 cup sun-dried tomatoes, finely chopped
- 2 tbsp shallots, diced
- juice of 2 limes
- salt and pepper to taste
Instructions
- Soak sun-dried tomatoes in the lime juice for 10 minutes
- Mash avocados with a mortar and pestle or fork and add salt and pepper to taste
- Mix in the sun-dried tomatoes with the avocado
- Serve immediately with veggie wheels, plantain chips or on toast
